Im not bodied and I still had to notch my cab and crossmember cause i want to roll Cali hard. Ive never seen a 2pc shaft on a reg cab truck but I would definetly go a 1 pc with that motor and tranny combo.

Thats weird... With front up and back all the way down your driveshaft doesen't hit the cab?

As far as the pinion angle goes, you want to cancel out the angles of the u joints. Find out the degree of the output shaft of the trans and have that same degree on the lower plane at ride height if that makes sense. Im sure you can google images for it to help.
