So I just replace my head gasket & did a delete on my EGR. I started the truck up, and it runs great! The only issue is when I'm driving I get a jerking motion every 30sec to 1min. The jerking motion is worst when I'm coasting at a high rpm in any gear. I'm thinking it the carb just needs to be tune or a cleaning since it hasn't been driven in a couple months. The other possibly could be a vacuum line could be in the wrong place because I had to cap off some lines due to the delete on the EGR

Intermittent stumble. Check your ignition system. Carbon tracking in the distributor cap, leaking high tension lead (coil or plug wire), electronics. I'd guess you installed new plugs, so that probably wouldn't be it.
For the coil and plug wires wait until its dark out and look and listen for any spark. You can also attach a wire to the engine and run that wire along the plugs wires to look for a spark. If your balls are big enough you can lean on the vehicle and run your hand on all the high voltage wires. Shocking experience!
Carbon tracking or worn cap and rotor? If you are using the same units you had before you could replace them or clean them up really good.
The pick-ups or the igniter could be starting to have issues.

If you think it's the carb, could be from drying out while it sat, or debris entered the float bowl while it sat on the bench. Before I cracked the carb I'd drive it for a week to see if it would clear up on it's own, maybe throw in a can of cleaner, Berrymanns B-12, or Seafoam, etc..
Check your fual level in the site glass, should be right at the center of the glass. There is a dot to indicate the proper level.
