My truck had overheated about a month ago and my old man to change the thermostat so I did and it worked fine but now it gets about 3/4 on the oil temp, and now it turns of them off by itself. Any ideas? All help appreciated

try flushing your cooling system. Also check if your fan clutch is working properly, and nothing is obstructing airflow.

X2^^....... what oil temp gauge? Trucks turning itself off ? Did you bleed the coolant system of air
Obstructions rust /gunk maybe blocking flow in radiator or thermostat housing

    Well first.

Let's figure out why it overheated in the first place.. Is the head gasket ok? What's the oil look like? Milky? Have condensation on the dipstick? Pull the plugs, turn the engine by hand til the pistons come up and use a strong light source to see the pistons. If one looks clean then the head gasket is gone.

Is it using coolant? You have to fill it up every day or so?

Do a compression test if you can. There is a problem with parts store thermostats and the 22re. Toyota has a replacement thermostat with dual valves. But that's a whole different topic. The quick fix is to cut the lil jiggle valve on the thermostat off. Issue is called 22re temp overshoot if you wanna google it.
